Stir and cook over medium heat for 5 minutes, or until thick and smooth.
Slowly beat in a little of the cornflour mixture, then add to remaining mixture in pan.
Cook over low heat for one minute.
Remove from stove and cool slightly.
Add lemon juice, grated lemon rind and butter. Place prepared fruit in a bowl and pour sauce over the top.
Refrigerate until thoroughly chilled and ready to serve.
