Mix the confectioners' (icing) sugar and coconut in a bowl and add the egg white.
Mix with a fork, then work with the fingers to a firm dough.
Cut a circle of non-stick parchment (greaseproof paper) the size of the microwave turntable (about 11 inches (28 cm) in diameter).
Oil the edge of the paper but not the center.
Scoop up portions of the coconut mixture the size of walnuts and form into balls.
Arrange on the oiled area of the non stick parchment (greaseproof paper), spaced equally apart.
Microwave, uncovered, on HIGH for 3 minutes; the dough will spread a little.
Remove from the oven and leave to harden at room temperature.
When cold and firm, lift off with a spatula and arrange on a plate.
Break the chocolate in pieces and melt with the butter for 1 minute on HIGH.
Stir thoroughly.
Coat each coconut ball with chocolate.
Leave to harden.
These coconut dreams will keep very well for several days in a tightly sealed cake tin.
