Coconut Discs Recipe
Ingredients
| 2 tablespoons butter or margarine, softened to room temperature | ||
| Sugar | 1/2 Cup (16 tbs) | |
| 1 egg, lightly beaten | ||
| Almond extract | 1/4 Teaspoon | |
| 1 cup packaged biscuit mix | ||
| Milk | 2 Tablespoon | |
| Flaked coconut | 2/3 Cup (16 tbs) | |
Directions
Preheat oven to 375° F.
Mix butter with sugar, egg, and almond extract.
Add biscuit mix and milk and blend until smooth.
Stir in coconut.
Drop by rounded teaspoonfuls 2" apart on greased baking sheets and bake 10 minutes until lightly browned.
Transfer to wire racks to cool.
