Coconut Custard Pie Recipe
Are you looking for a fabulous Coconut Custard Pie recipe? Best enjoyed as a Dessert this recipe was taught to me by a dear friend who also happens to be a great chef. Its good to make Coconut Custard Pie for your family member whose diet is full of Diabetic recipes. I am sure both of us will be in agreement that this Coconut Custard Pie is truly scrumptious.
Ingredients
9 inch unbaked pie shell
4 eggs, slightly beaten
2 cup warm skim, milk
1/2 cup granulated sugar
1 tsp vanilla extract
1/3 cup flaked coconut
Directions
Combine eggs, skim milk, sugar replacement, and vanilla in a bowl.
Beat to blend.
Sprinkle 1/3 cup (90 mL) of the coconut on the bottom of the unbaked pie shell.
Pour custard mixture over coconut.
Top with remaining coconut.
Bake at 350°F (175°C) for 30 to 35 minutes or until knife inserted in center comes out clean.
Cool to room temperature.
Beat to blend.
