Traditional Coconut Cream Pie Recipe

Ingredients

 
1 9-ihch BASIC ROLLED PIE CRUST prepared and baked in advance
 
2 cups milk
 
1 cup unsweetened coconut
 
3 egg yolks
 
1/4 cup warmed honey
 
2 tablespoons soft butter
 
2 teaspoons vanilla
 
1/4 cup whole wheat flour
 
1/2 teaspoon salt
 
1/4 cup toasted coconut for garnish

Directions

Mix 1/2 cup milk with coconut.
Heat remaining milk in heavy saucepan.
Mix egg yolks, honey, butter, and vanilla.
Stir in flour and salt.
Mix thoroughly.
Pour about 1/2 cup of hot milk into egg yolk mixture.
Stir well, then pour into hot mixture in saucepan.
Cook over medium heat until thick and smooth, stirring constantly.
Remove from heat and add the coconut-milk mixture.
Stir until well blended.
Pour into baked pie shell and cool.
Top with toasted coconut and chill until ready to serve.
