Coconut Chewies Recipe
Ingredients
| 100 g/4 oz plain flour | ||
| Soda bicarbonate | 1 1/2 Teaspoon | |
| 50 g/2 oz butter or margarine | ||
| 100 g/4 oz desiccated coconut | ||
| 75 g/3 oz caster sugar | ||
| 75 g/3 oz golden syrup | ||
Directions
Lightly grease two baking trays.
Sift the flour and bicarbonate of soda into a bowl.
Rub in the butter or margarine until the mixture resembles fine breadcrumbs.
Stir in the coconut and sugar, then bind to a soft dough with the syrup.
Divide the mixture into 25 and form each piece into a small ball the size of a walnut.
Place the coconut chews at intervals on the prepared baking trays, allowing room for them to spread.
Bake in a moderate oven (180C, 350F, gas 4) for 12-15 minutes, or until golden brown.
Allow the biscuits to cool on the trays for a minute before transferring them to a wire rack to cool completely.
