Coconut Loaf Recipe Video

I think this is the best loaf I've ever made! I love coconut and this quick bread was such a simple and fast way to get that amazing flavour! I can't wait to make it again... so, so good!

Ingredients

For the wet ingredients
 Butter1⁄2 Cup (8 tbs)
 Sugar1 Cup (16 tbs)
 Eggs2 Large
 Milk1⁄2 Cup (8 tbs)
 Vanilla1 Teaspoon
For the dry ingredients
 Flour1 1⁄2 Cup (24 tbs)
 Baking powder1 Teaspoon
 Salt1⁄2 Teaspoon
 Coconut1 Cup (16 tbs), grated

Directions

GETTING BREAD
1. Preheat the oven to 350 degrees F.

MAKING
2. In a mixing bowl, using a hand blender, cream the butter, sugar, eggs (one at a time) and milk. Beat all the ingredients until well combined.
3. In another bowl, add and combine together the flour, coconut, baking powder and salt. Mix well until well incorporated.
4. Stir dry ingredients into the wet ingredients until well combined.
5. Take a greased 9 x 5 inch loaf pan and pour the above batter into the pan evenly. Bake it in the preheated oven for 60 - 70 minutes or until a toothpick inserted comes out clean.
6. Once done, let it cool completely on rack before serving.

SERVING
7. Serve the coconut loaf sliced into desired pieces along side tea or coffee.

The last ingredients were 1 teaspoon baking powder and 1/2 teaspoon salt. Hope that helps.
