Coconut Biscuits Recipe
Ingredients
85 grams (3 oz.) self-raising flour
55 grams (2 oz.) margarine or butter
40 grams (1 1/2 oz.) desicated cocoanut
55 grams (2 oz.) powdered sugar
85 grams (3 oz.) icing sugar, glace cherries for decoration
Directions
1. Cream the margarine and powdered sugar very well until light and creamy.
2. Add 2 teaspoons of water, 1 teaspoon at a time and beat well each time.
3. Sieve the flour and add to the cream mixture.
4. Add the desicated cocoanut and mix well.
5. Shape the biscuits into small rounds and arrange them on a well-greased baking tin.
6. Bake in a hot oven at 400°F. for 15 minutes.
7. Cool the biscuits.
8. Add about 2 teaspoons of hot water to the well-sieved icing sugar. Mix well.
9. Apply this icing on top of each biscuit and put a cherry on top.
