Cocoa Nut Oatmeal Muffins Recipe
Cocoa nut oatmeal muffins are healthy and delicious muffins made with cocoa and chopped nuts. Baked with oats and milk along with vanilla for flavor, this muffin recipe is an anytime snack.
Ingredients
1/2 cup margarine, melted 125 mL
2 eggs
1 cup milk 250 mL
1 tsp vanilla 5mL
11/4 cups all-purpose flour 300 mL
3/4 cup oats 175 mL
1 cup granulated sugar 250 mL
1/3 cup cocoa 75 mL
1 tbsp baking powder 15 mL
1 tsp salt 5mL
1 cup chopped nuts 250 mL
Directions
In a small bowl, whisk together margarine, eggs, milk and vanilla.
In a large bowl, mix together flour, oats, sugar, cocoa, baking powder and salt.
Add egg mixture, stirring just until moistened and blended.
Fold in chopped nuts.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 15 to 20 minutes or until toothpick inserted in the center comes out clean and dry.
HINT: Try ice cream muffins! Soften 2 or 3 different flavors of ice cream.
Fill muffin tins one-third full with one flavor.
Smooth out into bottoms of cups and then layer with the other flavors.
Freeze, Unmold and then decorate as you wish.
