Cocoa Banana Muffins Recipe

Ingredients

 
1 1/4 cups whole wheat flour
 
1/2 cup oat flour
 
1/2 cup sugar
 
1/4 cup plus 2 tablespoons cocoa powder
 
1 tablespoon baking powder
 
1 cup very ripe mashed banana (about 2 large)
 
3/4 cup skim milk
 
2 egg whites
 
1 teaspoon vanilla extract
 
1/4 cup chopped walnuts (optional)
 
TOPPING
 
4 teaspoons sugar (optional)

Directions

1. In a large bowl, combine the flours, sugar, cocoa, and baking powder, and stir to mix well. Add the banana, milk, egg whites, and vanilla extract, and stir just until the dry ingredients are moistened. Fold in the walnuts if desired.
2. Coat muffin cups with nonstick cooking spray, and fill 3/4 full with the batter. Sprinkle the sugar over the batter if desired. Bake at 350 °F for 14 to 16 minutes, or just until a wooden toothpick inserted in the center of a muffin comes out clean.
3. Remove the muffin tin from the oven, and allow it to sit for 5 minutes before removing the muffins.
