Coastal Shrimp Coquilles Recipe

Ingredients

 
3 tbsp (45 ml) butter
 
1 small onion, chopped
 
1 cup (250 ml) long grain rice, rinsed
 
1 1/2 cups (375 ml) light chicken stock, hot
 
3/4 cup (175 ml) grated Gruyere cheese
 
1 1/2 lb (750 g) small shrimp, peeled and deveined
 
1 1/2 cups (375 ml) hot paprika sauce
 
3 tbsp (45 ml) coarse breadcrumbs
 
Salt and pepper

Directions

Preheat oven to 350°F (180°C).
Heat 1 tbsp (15 ml) butter in ovenproof casserole.
Add onion and cook 2 minutes over medium heat.
Stir in rice and cook 2 minutes over high heat.
Pour in chicken stock, mix well and season.
Cover and cook 18 minutes in oven.
Four minutes before end of cooking time, mix in cheese and continue cooking.
Remove cooked rice from oven, fluff with fork and set aside.
Heat remaining butter in frying pan.
Cook shrimp 3 minutes over medium-high heat, stirring once and seasoning.
Spoon layer of rice in bottom of scallop shells.
Add shrimp and cover with paprika sauce.
Top with breadcrumbs and broil in oven for several minutes.
