Club Salad Recipe
Ingredients
| 4 slices whole wheat or white bread, crusts cut off, quartered | ||
| 1 1/4 pounds boned and skinned chicken breasts, poached and thinly sliced, or 2 3/4 cups sliced roast chicken | ||
| Ripe tomatoes | 2 Large, cut into wedges | |
| 2 slices lean bacon, cooked and coarsely crumbled | ||
| 1/4 teaspoon each salt and black pepper | ||
| Russian dressing | 3/4 Cup (16 tbs) | |
| Mixed greens | 6 Cup (16 tbs) | |
Directions
1. Preheat the oven to 400°F. Place the bread on a baking sheet and bake, turning once, for 7 minutes or until crisp and lightly browned.
2. In a large bowl, combine the chicken, tomatoes, and bacon. Sprinkle with the salt and pepper. Spoon the dressing over all and toss. Place the greens on four dinner plates, spoon the salad mixture on top, and arrange 4 croutons along the edge of each plate.
