Ingredients

 
1/4 cup celery, diced
 
4 cups tomato juice
 
1/4 cup carrot, diced
 
6 whole cloves
 
1/4 cup onion, diced
 
1 bay leaf
 
2 tablespoons butter
 
1 teaspoon salt
 
2 sprigs parsley
 
1/8 teaspoon thyme
 
2 cups hot consomme

Directions

Saute celery, carrots and onions in butter for 5 minutes.
Add the remaining ingredients except consomme.
Bring to a boil.
Cover and simmer over low heat for 1 hour.
Strain.
Add consomme.
