Thai Style Chicken Soup With Coconut Recipe Video

Ingredients
4 cup low sodium chicken broth
1 (14 oz.) can coconut milk, fats removed
1 stalk fresh lemongrass
1/4 t red pepper flakes
1 boneless chicken breast, sliced thinly
2 T lime juice
1/2 red bell pepper, sliced very thinly
1/2 green bell pepper, sliced very thinly
4 button mushrooms, sliced very thinly
fresh cilantro, for garnish
Directions
Add first 7 ingredients to a saucepan and bring to a boil.
Reduce heat to simmer, cook for 15 minutes, or until chicken is thoroughly cooked.
Add peppers and mushrooms, cook for a minute.
Add salt and pepper to taste.
Ladle into bowls and garnish with cilantro.
