Classic Macaroni Summer Salad Recipe Video

A lightened version of a summer time favorite - macaroni salad with bell pepper and celery for crunch and sour cream for richness

Ingredients

 
1/2-1 lb elbow macaroni (if you use the larger amount you might need a bit more dressing)
 
1/2 bell pepper, diced
 
1.5 Tbs shredded white onion
 
1.5 Tbs sweet relish
 
1 Tbs low fat milk
 
1 Tbs low fat sour cream
 
1/4 cup light mayonnaise
 
2 stalks celery diced
 
1/2 carrot shredded
 
salt and pepper

Directions

cook pasta according to package directions, drain and let cool
combine all dressing ingredients, add pasta and stir to coat
let refrigerate for 1 hour to allow flavors to blend

I love macaroni salad, especially the one with etra cheese. This recipe with celery leaf and bell pepper should taste good too.

Curry with mayo ...wow !! I hve to try that out. I havent had Mac salad in a while at home. The pic looks tempting though :)

And the shrimp with the curry is perfect! I use Indian curry paste to taste. After it mellows in the frig the curry really comes forward so don't overdo it. . Shanti/Mary-Anne
