MAKING
1) Separate the egg yolks and egg whites
2) Beat the egg yolks and the sugar well
3) Beat the egg whites till fluffy and firm
4) Mix in the mascarpone and the egg yolks
5) Stir in the whites are formed
6) Gently stir in the whites
7) Dip in the lady fingers in the black coffee to create the first layer
8) Add a tablespoon of rum to the soaked lady fingers
9) Place the soaked fingers into a dish
10) Cover the fingers with a layer of cream
11) Repeat with all the layers
12) Layer the last with cream
13) Keep in the refrigerator to cool for at least three hours
14) Sprinkle cacao powder
SERVING
