Classic Crab Louis Recipe
Ingredients
| Mayonnaise | 1 Cup (16 tbs) | |
| 1/4 cup tomato-based chili sauce | ||
| 1/4 cup each finely chopped green pepper and green onion | ||
| Whipping cream | 1/4 Cup (16 tbs), Whipped | |
| Salt | To Taste | |
| Lemon juice | ||
| 2 small heads iceberg lettuce | ||
| 2 large Dungeness crabs, cooked, cracked, and shelled, or 3/4 to 1 pound cooked or canned crab | ||
| 4 large tomatoes, cut in wedges | ||
| 4 hard-cooked eggs, cut in wedges | ||
| Parsley sprigs | ||
| Lemon wedges | ||
Directions
Mix together mayonnaise, chili sauce, pepper, and onion; fold into whipped cream.
Season with salt and lemon juice to taste.
Arrange outer leaves of lettuce on 4 large plates; shred remaining lettuce and divide evenly among 4 plates.
Place crab (reserve legs) on shredded lettuce.
Arrange tomatoes and eggs around crab.
Pour over dressing and garnish with crab legs, parsley, and lemon wedges.
