Claret Consomme Recipe

Ingredients

 
1 1/2 C. Claret
 
2-3 cinnamon sticks
 
2 t. sugar
 
1 qt. clarified rich beef stock, or 3- 10 1/2 oz. cans consomme
 
Lemon slices

Directions

Bring claret, cinnamon sticks, and sugar to boil in small saucepan.
Remove from heat and let stand in warm place several hours (overnight is good).
Strain claret mixture into the stock or consomme and heat.
Spoon into pretty cups and float a lemon slice on top of each.
Fine for luncheon or first course of formal dinner.
