Ingredients
1kg clams in shells, scrubbed and rinsed
1 teaspoon salt
4 spring onions, finely chopped
3cm piece fresh root ginger, peeled and finely chopped
4 tablespoons soy sauce
1 teaspoon medium sherry
2 tablespoon sesame oil
Directions
Bring a large saucepan of salted water to rapid boil, add clams and boil for 10 minutes until clams have opened.
Drain, remove and discard the top shells.
Sprinkle each clam with spring onions and ginger.
In a bowl mix together the soy sauce, sherry and sesame oil.
Spoon a little over each clam.
