Clam Chowder Recipe

Ingredients
1 can 51 oz chopped clams
4 slices hickory smoked bacon, minced
1 onion, finely chopped
2 tbsp flour
4 med potatoes, peeled & diced
3 cups milk
3 tbsp butter
2 tsp oregano
2 tsp dill
2 tsp dried parsley
2 bay leaves
salt & freshly ground pepper, to taste
Directions
Drain out juice from the clam.In a pan add clam juice,bay leaves,potatoes & bring them to a boil,make sure that the potatoes turn soft.In a separate pan,saute butter,bacon,onion,parsley & oregano.You need to saute them mildly do not brown the mixture.
In a separate pan melt butter & saute bacon,onion, oregano, and parsley over low heat. Do not allow to brown.Add flour to this saute mix & continue to cook for some time over medium heat.Once the potatoes are done,add the stock to this bacon mix,strain the liquid from potatoes.& keeping string it till the mixture becomes smooth.Add the potatoes & the rest of the ingredients to this bacon mix.Add milk,black pepper,add dill weed and let it simmer.

Love the clam chowder we get at the San Francisco pier. I prefer my clam chowder with Onions, Potatoes and Carrots. Yes, small carrots are sometime used and always taste great in the chowder.
