Clam Lasagna Recipe

Ingredients

 
Approx. 9-10 lasagna sheets
 
Approx. 16 oz. chopped spinach
 
2 cups ricotta cheese
 
8 oz. thinly sliced mozzarella cheese
 
1/4 cup Parmesan cheese
 
2 small cans of clams (5 1/2-6 1/2 oz. can)
 
1 tbsp. margarine
 
4 tbsp. flour
 
2/3 cup bottled clam juice (or fish stock)
 
3 crushed garlic cloves
 
1/2 tsp. each dried basil, oregano, thyme
 
1/4 cup chopped parsley
 
2 tbsp. lemon juice
 
Dash of pepper

Directions

Cook in boiling water.
Drain, rinse, and set aside.
Meanwhile, prepare filling.
Cook just until done, strain well.
Set aside.
Drain clams and save liquid.
Set aside.
Melt in saucepan.
Add, mix, and cook for 1 minute.
Add along with reserved clam liquid.
Cook until mixture boils and thickens, approx 4 minutes.
Remove from heat.
Stir into above along with reserved clams.
