Classic Clam Fritters Recipe

Ingredients
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon sugar
1/4 teaspoon salt
2 dozen cherrystone clams, shucked, with their liquid
2 eggs
1 teaspoon grated onion
Salad oil
Tartar Sauce
Directions
1. In bowl, combine flour with baking powder, sugar, and salt. Drain clams, reserving 1/2 cup liquid; coarsely chop clams.
2. In another bowl, combine clams, eggs, onion, and reserved clam liquid; beat just until mixed. Stir clam mixture into flour mixture.
3. In 12-inch skillet over medium heat, in 1 tablespoon hot salad oil, drop some clam mixture by tablespoons; cook several fritters at a time until golden, turning once. Keep warm on platter while cooking remaining fritters; add more oil as needed.
