|Heavy cream||2⁄3 Cup (10.67 tbs)|
|Grated lemon rind||1 Teaspoon|
|Lemon juice||2 Teaspoon|

Allow to cool, then stir in the sugar and orange rind.
Reserve a few mandarins for decoration and rub the remainder through a sieve or puree in a blender or food processor.
Whip the cream until thick and fold into the mandarin puree with the lemon rind and juice.
Place alternate layers of breadcrumbs and cream mixture in two tall glasses.
Decorate with the reserved mandarins and serve chilled.
