Citrus Iced Tea Recipe

India produced some of the best tea varieties, with a diverse range of colours and aromas. This citrus tea has a delicious spicy aroma of cloves and is best served ice cold.

Directions

Bring some water to the boil, pour it into a large teapot to warm it, then throw the water away. Put the tea leaves in the teapot and add the cloves.
Boil 1 litre of water and pour it over the ta leaves. Replace the lid and leave to infuse for 4 to 5 minutes. Strain the tea into a large jug.
Cut the orange in half and aqueeze to extract the juice. Pour the orange juice into the jug of tea and add the ground cinnamon. Stir well to mix.
Squeeze the lemons and pour the juice into a large saucepan. Add the caster sugar. Heat gently while stirring until all the sugar is dissolved. Stir in the honey and let the mixture cool a little. Pour this lemon syrup into the jug, stir well and leave it to cool completely.
Just before serving, put ice cubes into 4 large glasses. Pour the citrus tea over them. Garnish each glass with a slice of lemon.
