Citrus Corn Cobs Recipe
Ingredients
| 100 g/4 oz/1/2 cup unsalted butter | ||
| Grated rind of each of 1 orange, lemon and lime | ||
| 5 ml/1 tsp ground cinnamon | ||
| Ground black pepper | 1 To taste | |
| 6 sweetcorn cobs, husks removed | ||
| Salt | To Taste | |
Directions
Mash the butter with the grated orange, lemon and lime rinds, the cinnamon and a little salt and pepper.
Lay the cobs on six pieces of foil, shiny side up, and spread all over with the butter mixture.
Wrap loosely but securely.
Barbecue for 12-15 minutes until the corn is tender, turning occasionally.
Transfer to serving plates and allow guests to unwrap their own to get the full fragrance of the corn.
NOTE: If the cobs are large, which means they might not be so tender, par-boil in lightly salted water for 5 minutes and drain thoroughly before coating with the flavoured butter and wrapping in foil.
