Citrus Tomato Ice Recipe
Ingredients
| Ripe tomatoes | 1 1/2 Pound | |
| Garlic | 1 Clove (5gm), skinned | |
| Grated rind and juice of 1 lemon | ||
| Dried basil | 1 Teaspoon (Leveled) | |
| Caster sugar | 1 Tablespoon (Leveled) | |
| Tomato Paste | 1 Tablespoon (Leveled) | |
| Salt | 1/2 Teaspoon (Leveled) | |
| black pepper | 1 | |
| Avocados | 4 (To complete dish from freezer) | |
Directions
GETTING READY
1) Cut the tops out and quarter the tomatoes.
MAKING
2) Take a large saucepan and combine quartered tomatoes, garlic, lemon rind, lemon juice, basil, caster sugar, tomato paste, salt, and, pepper.
3) Place the saucepan over medium heat and bring the mixture to a boil.
4) Now, lower the heat and let mixture simmer for about 10-15 minutes.
5) Sieve the mixture and let the syrup cool down.
SERVING
6) Serve chilled with avocados and cucumber slices, if desired.
