Ingredients

 
4 cups water
 
8 strips lemon zest (colored part of the rind), each 3 inches by 1/4 inch
 
8 strips orange zest, each 3 inches by 1/4 inch
 
2 cinnamon sticks, split lengthwise
 
8 whole cloves
 
1/2 teaspoon each ground ginger and allspice
 
3 bags black tea

Directions

1 In a small saucepan over high heat, bring the water, I lemon zest, orange zest, cinnamon stick, cloves, ginger, and all spice to a boil.
Lower the heat, cover, and simmerfor 10 minutes.
Pour into a warm teapot, add the tea bags, and steep for 10 minutes.
Pour the tea through a sieve into teacups or let cool and strain over ice
