Citrus Omelette Recipe
This Citrus Omelet is a fruity sweet egg dish cooked in the microwave. Just try this Denver Omelet and tell me if you'd like to make it once more !
Ingredients
4 eggs
2 tablespoons half-and-half
2 tablespoons orange juice
1 tablespoon sugar
1 tablespoon butter or margarine
1/4 cup orange marmalade
Directions
1. Beat eggs, half-and-half, orange juice and sugar together in a bowl.
2. Melt butter in a 9-inch glass pie plate (about 30 seconds at High). Add egg mixture. Cover with plastic wrap. Cook in microwave oven 4 to 5 minutes at Medium-High, or until almost set. Draw cooked portions to center with spoon or fork to let uncooked mixture flow to bottom; tilt pie plate as necessary, but do not stir.
3. Remove from oven and let stand 1 minute. Loosen edges with rubber spatula. Spread orange marmalade in middle of omelet. Fbld omelet in thirds to enclose filling.
