Place rind and fruit into a large pot.
Add water, bring to a boil, cover, and simmer for 5 minutes.
Let stand overnight in a cool place.
Bring mixture to a boil again, and cook, with cover ajar, until rind is tender, about 1 hour.
Measure fruit and liquid, adding 1/2 cup honey for every cup of fruit and juice.
Cook rapidly, stirring often, to jelling point, about 45 minutes.
Take care that mixture does not overcook and does not stick toward the end of the cooking time.
Pour boiling hot into hot sterilized jars, leaving 1/4 inch of headspace.
Seal, and process in boiling water bath for 10 minutes.
