Citrus Marinated Grilled Shrimp With Jicama Leek Salad Recipe

Ingredients

 6 each U-10 green shrimp, peeled and deveined with tails on
 Juice of 1 lime
 Soy sauce2 Tablespoon (Citrus Marinade:)
 Garlic1/2 Tablespoon, chopped (Citrus Marinade:)
 Cajun spice1 Teaspoon (Citrus Marinade:)
 Vegetable oil1 Teaspoon (Citrus Marinade:)
 10 chopped cilantro leaves
 Minced ginger1/2 Teaspoon (Citrus Marinade:)
 Jicama4 Ounce, julienned (Jicama Leek Salad:)
 Pepper red1 Ounce, julienned (Jicama Leek Salad:)
 1 oz. sliced leeks, cut in half-moons
 10 whole ciiantro leaves
 Rice vinegar1 Tablespoon (Jicama Leek Salad:)
 Infused cilantro oil
 Chives1 Teaspoon, chopped (Jicama Leek Salad:)
 Salt To Taste
 Pepper To Taste

Directions

Combine first 6 salad ingredients; set aside.
Combine marinade ingredients.
Marinate shrimp for 2 minutes.
Grill shrimp on hot grill until done.
Baste with marinade so marinade caramelizes on shrimp.
Place salad in center of dinner plate; arrange 3 shrimp per order around salad.
Drizzle infused cilantro oil in drops around shrimp with squirt bottle.
Dust rim of plate with chopped chive rings.
Garnish top of salad with large cilantro sprig.
