Citrus Grilled Swordfish Recipe
Ingredients
| 1/4 cup unsweetened grapefruit juice | ||
| 2 tablespoons reduced-calorie morgarine, melted | ||
| 1 teaspoon grated grapefruit rind | ||
| Celery salt | 1/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 2 (12-ounce) swordfish steaks (1-inch thick) | ||
| Vegetable cooking spray | ||
| Hazelnuts | 2 Tablespoon, finely chopped | |
Directions
Combine first 5 ingredients in a small bowl.
Place swordfish steaks in a shallow dish; pour grapefruit juice mixture over steaks.
Cover and marinate in refrigerator 1 hour.
Remove steaks from marinade; set aside.
Bring marinade to a boil in a small saucepan; boil for 2 minutes.
Coat grill rack with cooking spray; place on grill over medium-hot coals.
Place steaks on rack, and cook for 8 to 10 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with marinade.
Transfer to a serving platter, and sprinkle with hazelnuts.
Garnish with grapefruit sections.
