Citrus Grape Mould Recipe
Ingredients
| Unflavored gelatin | 1 | |
| Sugar | 1/4 Cup (16 tbs) | |
| Orange juice | 3/4 Cup (16 tbs) | |
| Lemon juice | 1/4 Cup (16 tbs) | |
| 2 teaspoons grated lemon rind | ||
| Orange rind | 1 Teaspoon, grated | |
| Almond extract | 1/2 Teaspoon | |
| Egg whites | 4 | |
| Seedless green grapes | 1 Cup (16 tbs), halved | |
Directions
1. In medium saucepan, combine gelatin, sugar, orange juice, lemon juice, lemon rind and orange rind. Heat over very low heat just until gelatin is dissolved.
2. Pour into large bowl; stir in almond extract. Cool, and chill until semi-set, about 30 to 45 minutes.
3. Using electric mixer at high speed, beat egg whites in large bowl until stiff. Using mixer at high speed, beat gelatin mixture until light and fluffy.
4. Using rubber spatula, fold egg whites into gelatin mixture. Spoon into 1 1/2-quart mold, sprinkling grape halves throughout mixture. Chill until set, at least 2 hours. Dip mold into hot water and invert onto serving platter; shake to release mold.
