Citrus Gingerbread Recipe
|Butter/Margarine||1⁄2 Cup (8 tbs), softened|
|Sugar||3⁄4 Cup (12 tbs)|
|All purpose flour||2 Cup (32 tbs)|
|Baking soda||1 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Ground ginger||1⁄2 Teaspoon|
|Buttermilk||3⁄4 Cup (12 tbs)|
|Chopped sectioned oranges||1 Cup (16 tbs), without membrane|
|Chopped pecans||1⁄2 Cup (8 tbs)|

Combine the flour, baking soda, cinnamon, ginger and salt; add to creamed mixture alternately with buttermilk.
Stir in molasses.
Fold in oranges and pecans.
Pour into a greased 9-in.square baking pan.
Bake at 350° for 45-50 minutes or until a wooden pick inserted near the center comes out clean.
If desired, dust with confectioners' sugar and garnish with orange peel.
