Scoop out pulp, slice into pieces and put into a bowl.
Set orange shells in custard cups.
Reserve 1 tsp (15 ml) coconut.
Add remaining coconut, grapefruit and pineapple to orange pieces; toss gently.
Spoon fruit into orange shells.
Top with reserved coconut.
