Citrus Cheesecake Recipe
Ingredients
| Cornflakes | 2/3 Cup (16 tbs) | |
| 1/4 cup Grape Nuts | ||
| 2 teaspoons corn oil margarine, melted | ||
| 2 teaspoons fresh lemon rind, grated, divided | ||
| 1 teaspoon fresh orange rind, grated | ||
| Light brown sugar | 1 Teaspoon | |
| 2 envelopes unflavored gelatin | ||
| Granulated Sugar | 3/4 Cup (16 tbs), divided | |
| Milk fat | 1 1/2 Cup (16 tbs) | |
| Eggs | 3 , separated | |
| Ricotta cheese | 3 Cup (16 tbs) | |
| Orange juice | 1 Tablespoon | |
| Lemon juice | 1 Tablespoon | |
| Vanilla extract | 1 Teaspoon | |
| 2 kiwifruit, peeled and sliced | ||
Directions
Preheat oven to 350 degrees.
In a blender container or food processor combine cornflakes and Grape Nuts.
Process until crushed.
In a medium bowl combine crushed cereals, margarine, 1 teaspoon lemon rind, orange rind and brown sugar; mix well.
Over the bottom of an 8-inch springform pan press the cereal mixture.
Bake for 5 minutes.
Cool.
In the top of a double boiler combine 1/4 cup sugar and gelatin.
Stir in milk and egg yolks.
Let stand until gelatin softens.
