Citrus Beets Recipe
Ingredients
2 bunches beets, tops removed to be used in salads
1/4 cup light brown sugar
1/4 cup frozen orange juice concentrate
2 tablespoons lemon juice
1 tablespoon grated orange rind
1 tablespoon cornstarch
2 tablespoons butter
1/2 cup chopped walnuts, pecans, or cashews
1 orange, thinly sliced
Directions
1. Cook the beets in boiling salted water to cover until tender, about 40 minutes, depending on size. Drain and reserve 1/4 cup of the cooking liquid. Slice the beets.
2. In a medium-sized saucepan combine the reserved cooking liquid, sugar, orange juice concentrate, lemon juice, orange rind, and cornstarch. Bring to a boil stirring until thickened and clear. Add the beets to the sauce.
3. Melt the butter in a small skillet and toast the nuts until golden.
4. Top the beets with slices of orange and sprinkle with the toasted nuts.
