Ingredients
| Medium grapefruit - 1 (about 1 pound) | ||
| Small navel orange - 1 (about 6 ounces) | ||
| Lettuce leaves | 8 | |
| Cucumber | 1/2 Cup (16 tbs), sliced | |
| Olive oil | 2 Teaspoon | |
| Mint | 1 Teaspoon, chopped | |
| Seasoned rice vinegar | 1 Teaspoon | |
Directions
MAKING
1.Take a small mixing bowl and over this peel and cut orange and grapefruit so as to catch the juice and reseve it.
2.In a small bowl, whisk together oil, mint, vinegar, reserved juices.
SERVING
3.Onto a serving platter, place a layer of lettuce.
4. Over this, arrange sections of orange, grapefruit and cucumber slices decoratively.
5. Drizzle with orange mixture.
