Peel the oranges and limes or grapefruit and cut into segments, discarding all the pith.
Add to the chicory.
Blend the oil, lemon juice and mustard together.
Season with salt and pepper to taste and stir in the parsley.
Pour over the salad and toss well.
Arrange the lettuce in a salad bowl and pile the salad on top.
Garnish with lime or orange slices to serve.
