Using an electric beater, beat egg whites until stiff, not dry, peaks are formed.
Add confectioners' sugar gradually, beating 5 minutes at medium speed.
Remove 1/3 cup of meringue and set aside.
Into remaining meringue, beat the lemon peel and cinnamon.
Fold in the almonds.
Turn almond mixture onto a pastry canvas sprinkled with confectioners' or granulated sugar.
Gently roll 1/4 to 1/2 inch thick.
Lightly sprinkle with sugar.
Cut with a 2-inch star-shaped cookie cutter dipped in confectioners' sugar.
Transfer to cookie sheets; drop about 1/2 tea-spoonful of reserved meringue onto each star and spread out evenly onto points.
Set aside in a warm place (about 80Â°F) 1 1/2 hours.
Bake at 375Â°F 5 minutes.
