Cinnamon Spiced Rice Recipe Video

So for the first QuickBite of the New Year I thought I'd share a really interesting side dish that's a hit everytime I make it....Cinnamon Spiced Rice. Now, I know cinnamon and rice don't sound like your conventional combination at first but trust me when I tell you, it's delicious! The flavors work really well together and it's a nice change of pace. I like serving this right along with my Okra Bowl.

 Onion1 , diced
 Garlic cloves2 , minced
 Raisins1⁄2 Cup (8 tbs)

Directions

1. Heat olive oil in a medium pot over medium heat. Saute onions and garlic for 2-3 minutes or until onions are beginning to turn translucent.

2. Add rice, raisins, cinnamon, salt, and cayenne pepper. Give it all a stir before pouring in your chicken broth.

3. Turn heat to a high and bring rice mixture to a boil. Once it's reached boiling, reduce to a simmer, pop the lid on, and cook for 12 minutes.

4. Remove lid and fluff. Enjoy!
