Cinnamon Doughnuts Recipe
Ingredients
8 cups whole wheat pastry flour
1 1/2 tablespoons cinnamon
1/2 teaspoon sea salt
2 3/4 cups lukewarm water
1 tablespoon dry yeast
1/4 cup unrefined corn germ oil
1/2 cup unsulfured molasses or raw honey
2 cups whole wheat pastry flour
Unrefined safflower oil for deep frying
Directions
Mix the flour, cinnamon, and salt in a large bowl.
Sprinkle the yeast into warm water and stir gently until the yeast is dissolved.
Add the corn germ oil and molasses or honey to the yeast mixture, stirring constantly.
Add the liquids to the flour in the bowl.
Stir with a long wooden spoon until the ingredients are very well blended.
Spread 2 cups more pastry flour on a board and place the dough on it.
Scrape remaining dough from sides of bowl and add to dough on board.
Oil the bowl.
Knead the dough for 15 minutes or until it is very smooth.
Place the dough in the oiled bowl.
Cover with a damp cloth and allow to rise in a warm place for 1 hour.
Punch the dough down and let rise 30 minutes more.
Roll the dough out on a lightly floured board and cut with a doughnut cutter.
Heat 3 inches of safflower oil in deep pan for 5 to 10 minutes over a medium-high flame.
If the oil starts to smoke, it is too hot.
