Ingredients
Cookie Dough:
1 lb. (500 g) honey
1-1/2 cups (300 g) sugar
3 eggs, beaten
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Generous pinch each of ground nutmeg, coriander, ginger, allspice and cardamom
1 teaspoon white pepper
6-2/3 cups (1 kg) all-purpose flour
Frosting:
Scant 1 cup (100 g) powdered sugar, sifted
3 to 4 tablespoons water
Directions
To make cookie dough, warm honey over low heat until liquid; pour into a large bowl.
Stir in sugar, eggs, baking soda, cinnamon, cloves, nutmeg, coriander, ginger, allspice, cardamom and pepper.
Mix in flour gradually.
Knead thoroughly to make a dough.
Preheat oven to 375 F (190°C).
Grease baking sheets.
Form dough into small balls about 1 inch (2.5 cm) across; place on greased baking sheets.
Bake 10 to 15 minutes or until golden brown.
Cool on a rack.
To make frosting, blend powdered sugar and water in a small saucepan.
Bring to a boil, stirring constantly.
Coat cookies with hot frosting.
