 3 tablespoons light butter, softened

Directions

1. Preheat oven to 375°.
2. Beat butter with a mixer at medium speed until creamy. Add brown sugar, beating well (mixture will be crumbly). Add egg and vanilla, beat well. Lightly spoon 1 1/2 cups flour into dry measuring cups, level with a knife. Combine flour, baking soda, and 1/2 teaspoon cinnamon, gradually add to butter mixture, beating well after each addition.
3. Sprinkle remaining 1 1/2 teaspoons flour over work surface. Shape the dough into 2 (6-inch) logs. Cut each log into 12 portions. Roll each portion into a ball.
4. Combine remaining 1/2 teaspoon cinnamon and granulated sugar in a small bowl, stir well. Roll balls in cinnamon-sugar mixture, place 3 inches apart on ungreased baking sheets. Bake at 375° for 8 minutes or until done. Remove from baking sheets, cool completely on wire racks.
