Ingredients

 3/4 cup cooked medium-grain brown rice
 1 1/2 cups reduced-carb, whole-milk dairy beverage
 2 teaspoons granular sugar substitute
 Eggs2 Large
 Vanilla extract2 Teaspoon
 Ground cinnamon1 Teaspoon
 2 tablespoons sugar-free pancake syrup
 Strawberries1/4 Cup (16 tbs), sliced

Directions

1. Combine rice, dairy beverage, sugar substitute, eggs, vanilla, and cinnamon in a medium saucepan. Cook, stirring constantly, over medium heat until mixture comes to a low boil.
2. Continue to cook, stirring often, until pudding thickens, about 8 minutes. Remove from heat and stir in syrup. Serve hot or cold topped with strawberries, if desired.
