Fried Cinnamon Balls Recipe
Ingredients
| Butter/Margarine | 6 Tablespoon, softened | |
| Sugar | 1/4 Cup (16 tbs) | |
| Grated peel of 1/2 lemon | ||
| Salt | 1 Pinch | |
| Eggs | 4 standard | |
| All purpose flour | 2/3 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Oil to deep-fry | ||
| Additional 1/2 cup (100 g) sugar | ||
| Ground cinnamon | 2 Teaspoon | |
Directions
In a large bowl, cream butter or margarine and 1/4 cup plus 2 tablespoons (80 g) sugar until pale and fluffy.
Add lemon peel and salt.
Beat in eggs one at a time.
Sift flour with baking powder; fold into mixture with a metal spoon to make a dough.
Heat oil for frying to 360°F (180°C) in a deep-frying pan.
Using 2 floured teaspoons, form dough into small balls.
Add about 8 balls at a time to hot oil.
Fry 5 to 6 minutes or until golden, turning halfway through cooking with a slotted spoon.
Lift out cooked balls with slotted spoon; drain on paper towels, Mix 1/2 cup (100 g) sugar and cinnamon; sprinkle over balls while still warm.
