Cinnamon Apple Skillet Cobbler Recipe
Ingredients
| 1/4 cup plus 3 tablespoons sugar, divided | ||

| 6 Granny Smith apples peeled, cored, and cut into 8 wedges each | ||
| Cornstarch | 2 Tablespoon | |
| Ground cinnamon | 1 Teaspoon | |
| 2 teaspoons grated lemon rind, divided | ||
| All purpose flour | 3/4 Cup (16 tbs) | |
| Baking powder | 1/2 Teaspoon | |
| Margarine | 3 Tablespoon, melted | |
| Vinegar | 2 Teaspoon | |
Directions
Combine 1/4 cup sugar and 1 tablespoon margarine in a 10-inch cast-iron skillet; cook over medium heat 5 minutes or until mixture is golden, stirring frequently.
Combine apples, cornstarch, cinnamon, and 1 teaspoon lemon rind; toss gently.
Layer apple mixture in skillet; sprinkle with 2 tablespoons sugar.
Combine flour, baking powder, remaining 1 tablespoon sugar, and remaining 1 teaspoon lemon rind in a bowl, stirring well.
Combine melted margarine and vinegar; add to flour mixture.
Stir with a fork just until dry ingredients are moistened.
Shape into a ball.
Place dough between 2 sheets of heavy-duty plastic wrap.
Roll dough into a 10 1/2 inch circle.
Remove top sheet of plastic wrap; invert over apple mixture.
Remove remaining sheet of plastic wrap.
Cut slits in pastry for steam to escape.
Bake at 375° for 45 minutes or until apples are tender and crust is golden
