Classic Cider Pie Recipe
Ingredients
| 1/3 cup grated maple or brown sugar | ||
| 1/3 cup sweet cider | ||
| Eggs | 3 , separated | |
| Ground nutmeg | 1/2 Teaspoon | |
| Butter | 1 Teaspoon | |
| 1/2 cup seeded raisins | ||
| Pie shell | 8 inch, baked | |
| Granulated Sugar | 1/3 Cup (16 tbs) | |
Directions
Combine sugar and cider; heat until dissolved.
Beat egg yolks; stir into sugar mixture and cook until thickened.
Add nutmeg, butter, and raisins.
Pour into baked pie shell.
Beat egg whites until foamy; add sugar gradually, continuing to beat until stiff.
Spread over pie filling and bake in preheated slow oven (325° F.) for about 15 minutes, or until meringue is golden brown.
