Chutney Recipe

The widely known condiment of India is the chutney which is served with other dishes. Chutney contained different fruits, spices, sugar, and vinegar that are cooked and mashed together. The earlier traditions of making this condiment were done with the use of the mortar and pestle. Now, this paste can already be made by simply chopping or with the use of a food processor.

Directions

-Place the tomatoes, onion, ginger, garlic, chili pepper, and almonds in a food processor until these are shredded. Make sure that you still keep the consistency of the mixture chunky,

-In a saucepan, heat the mixture. Add in the salt, ground pepper, and sugar. Allow this to simmer under medium fire.

-Pour in the vinegar and allow to cook for ten minutes more.

-Remove the chutney from heat and let it cool for at least an hour. Place the chutney in a serving bowl or in an air tight container and refrigerate.

The great thing about chutney in your refrigerator is that it can also be used as a meat marinade. Simply add a tablespoon of olive oil to half cup of chutney and rub in the meat. It may also be used as a glaze for meat that you are grilling or baking. Because of the mixture of fruits and sugar, it caramelizes as you cook the meat.
