 Stewed tomatoes large can1
 1 medium size green pepper, seeded and finely chopped
 1/2 cup each thinly sliced green onions and finely diced celery
 1/4 cup each chopped watercress and sliced pimento stuffed green olives
 Garlic2 Clove (5gm), pressed
 Parsley1/4 Cup (16 tbs), finely chopped
 3 tablespoons olive oil or salad oil
 Red wine vinegar1 Tablespoon
 Soy sauce1 Teaspoon
 Grated Parmesan cheese
 Salt To Taste
 Pepper To Taste

Directions

In a bowl, combine tomatoes and their liquid, green pepper, onions, celery, watercress, olives, garlic, parsley, oil, vinegar, and soy; stir well.
Cover and refrigerate until next day or as long as 3 days.
Season to taste with salt and pepper.
Pass Parmesan cheese to sprinkle over individual servings.
