Ingredients
| Stewed tomatoes large can | 1 | |
| 1 medium size green pepper, seeded and finely chopped | ||
| 1/2 cup each thinly sliced green onions and finely diced celery | ||
| 1/4 cup each chopped watercress and sliced pimento stuffed green olives | ||
| Garlic | 2 Clove (5gm), pressed | |
| Parsley | 1/4 Cup (16 tbs), finely chopped | |
| 3 tablespoons olive oil or salad oil | ||
| Red wine vinegar | 1 Tablespoon | |
| Soy sauce | 1 Teaspoon | |
| Grated Parmesan cheese | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In a bowl, combine tomatoes and their liquid, green pepper, onions, celery, watercress, olives, garlic, parsley, oil, vinegar, and soy; stir well.
Cover and refrigerate until next day or as long as 3 days.
Season to taste with salt and pepper.
Pass Parmesan cheese to sprinkle over individual servings.
