Chunky Tomato Gazpacho Recipe
Ingredients
| 6 tomatoes, peeled, seeded and chopped | ||
| 1 cup chopped seeded cucumber or sweet green pepper | ||
| Green onions | 4 Small, chopped | |
| 2 tbsp chopped fresh basil or parsley | ||
| Tomato juice | 2 Cup (16 tbs), chilled | |
| Olive oil | 1/4 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In large glass bowl, combine tomatoes, cucumber, green onions and basil; stir in tomato juice and oil. Season with salt and pepper to taste. Refrigerate until chilled.
