 6 tomatoes, peeled, seeded and chopped
 1 cup chopped seeded cucumber or sweet green pepper
 Green onions4 Small, chopped
 2 tbsp chopped fresh basil or parsley
 Tomato juice2 Cup (16 tbs), chilled
 Olive oil1/4 Cup (16 tbs)
 Salt To Taste
 Pepper To Taste

Directions

In large glass bowl, combine tomatoes, cucumber, green onions and basil; stir in tomato juice and oil. Season with salt and pepper to taste. Refrigerate until chilled.
